Chicken Pho with Camilla Aurel-Smith

She’s plated up a gloriously hearty and simple Chicken Pho recipe for you to conquer at home.
Slip into your comfies and get ready for some inside-out nourishment.
20ml olive oil
1x brown onion
4 x garlic cloves
1 x long chilli (or small if you want it extra spicy) Knob of ginger
2 x cinnamon quill
1 x tablespoon fennel seeds
3 x star anise
1 x tablespoon coriander seed
1 x bunch fresh coriander
1 x teaspoon fish sauce
1 x tablespoon Shaoxing wine
2 x celery
2 x carrot
1 x zucchini
2 x chicken breast
Fresh rice noodles
3L chicken stock
Bunch of coriander
Heat pot with olive oil and add thinly slice onion and garlic, sauté for 4 minutes. Add ginger and chilli and cook for another 2 minutes. Add all spices and cook for 2 minutes before adding Shaoxing wine and fish sauce. Add vegetables and mix through spice mix well.
Add 3L chicken stock and bring to the boil, cook for 15 minutes.
Reduce heat to a simmer and add whole chicken breasts, cook for 25 minutes.
Remove chicken from the soup and thinly slice as desired, add fresh rice noodles to the soup and cook for a further five minutes.
Remove from heat, serve soup in bowl with poached chicken on top and fresh coriander to serve.
